Investigadores de la Universidad de Barcelona y la Universidad Rovira i Virgili han demostrado que comer nueces aumenta los niveles de serotonina, una sustancia que ayuda a transmitir las señales nerviosas, reduce la sensación de hambre, mejora el estado de ánimo y promueve la salud cardíaca, además de reducir la obesidad abdominal y la hipertensión. Sus conclusiones se publican en la revista Journal of Proteome Research.
En una serie de experimentos comprobaron que incorporando un puñado diario de nueces en la dieta durante 12 semanas, se producían importantes cambios metabólicos. Concretamente los análisis de orina mostraron que aumentaban los niveles de serotonina a la vez que se reducían los niveles de sustancias asociadas con la inflamación y factores de riesgo cardiovasculares que suelen sufrir las personas con síndrome metabólico, también llamado síndrome X, que agrupa varioas enfermedades: hipertensión arterial, aumento de los niveles de azúcar, bajos niveles de colesterol bueno (HDL) y exceso de grasa alrededor de la cintura.
Según los autores, las nueces contienen ácidos grasos insaturados y antioxidantes (polifenoles)que pueden explicar sus efectos beneficiosos.
